I’ve always been a fan of an ooey gooey grilled cheese sandwich, but it wasn’t until I tried a grown up grilled cheese from a Nashville staple, the Grilled Cheeserie that I was hooked! They really are hands down the master’s of the grown up grilled cheese. Since leaving Nashville, there are several staples that I miss including the Grilled Cheeserie. So naturally, I had to learn to master my own grilled cheese sandwich to take me back to those good good days.
There really are several combinations that you could come up with to create your own grilled cheese sandwich. I personally LOVE caramelized onions and bacon together. Mmmm… yummm… Since I know that provolone cheese pairs really well with caramelized onions and bacon, I decided to run with it. The possibilities are truly endless. A cranberry and brie grilled cheese sounds AH-MAZING. And how about thinly sliced granny smith apples and cheddar cheese. Are your wheels turning yet? But what makes this sandwich truly special, is that I used a little bit of whiskey to give my onions a kick.
Growing up, a grilled cheese sandwich consisted of American cheese melted between two slices of Wonder Bread. Even though this is a CLASSIC grilled cheese sandwich that was and still is in every household, I wouldn’t exactly call this an elevated grown up grilled cheese. Save this one for the kids. To take your grilled cheese to the next level, you’re going to have to start with some quality bread. I chose to go with Sourdough because I like the density of it but feel free to explore different breads.
The next step will be the most time consuming but it’s pretty easy and absolutely the best part of this grilled cheese sandwich. Caramelized onions… YUM! I like to cook my caramelized onions low and slow on the stove with a little butter, brown sugar and whiskey. The sweetness is a good compliment to the bacon. Once the caramelized onions are done and your bacon is cooked, it’s time to assemble.
When you’re ready to cook up your grilled cheese sandwich, make sure you use softened butter to spread on your bread. Butter straight from the fridge will be tough to spread and won’t cover your bread evenly. So, get your bread slathered in butter and place the first slice butter side down. Layer your provolone cheese, caramelized onions, bacon and another slice of provolone cheese. Place your second slice of bread on top. Be careful not to burn this beautiful masterpiece. I like to start my heat off on low to make sure the cheese is melted thoroughly. Then you can crank up the heat just a bit to crisp up the edges!
1 large white onion, thinly sliced
2 shallots, sliced thinly
1/4 tsp. minced garlic
2 tbs. butter, for onions
5 tbs. brown sugar
1/4 cup whiskey
1/4 tsp. salt
2 slices cooked bacon
2 slices provolone cheese
2 slices sourdough bread, or bead of your choice
1-2 tbs. butter for bread
