Girl, you know I’m all about a quick meal I can throw together especially when I’m in a pinch. Shrimp is one of the easiest and quickest proteins to prep, cook and get on the table to feed a hungry family. It’s no secret that we love Mexican flavors around here so we eat it quite a bit. When we’ve had our fair share of chicken (we’re not beef eaters and we eat pork sparingly), I like to switch things up with seafood. My easy weeknight shrimp tacos is perfect to get dinner on the table fast and to switch things up!

This week I’ll be spending a lot of my time finishing up projects for the One Room Challenge so I’ll be pulling out all my go to easy recipes. On Friday night I literally crashed from trying to keep up with all the things. So learning from last week, dinner will be effortless and easy!

I’m not a big fan of the flavor packets that you can purchase because it’s hard to control the salt and spice level. When you have little mouths to feed, you want to know exactly what’s going in their tummies. With this recipe I can control the salt level and completely omit the spice for them and then add it back in when I prepare the shrimp for Jerome and I.

One of my favorite toppings for mexican inspired dishes at home is my Avocado Green Chili Sauce that literally goes with everything.

Easy Weeknight Shrimp Tacos with Avocado Green Chili Sauce

Ingredients

For the Avocado Green Chili Sauce

  • 1 Small Avocado
  • 2 Whole Garlic Cloves
  • 1 Juice from One Lime
  • 1/2 tsp Salt
  • 1/4 cup Mayo
  • 1/4 cup Sour Cream or Plain Greek Yogurt
  • 1 4.5 oz. can Green Chilies
  • 1 Handful Fresh Cilantro
  • 2 tbsp Olive Oil

For the Shrimp

  • 1 lb. Large Raw Shrimp, shelled and deveined
  • 2 tbsp Olive Oil
  • 2 tbsp Juice from Lime (about half of 1 lime)
  • 1/4 tsp Himalyan Pink Salt
  • 1/4 tsp Black Pepper
  • 1 tbsp Cumin
  • 1 tbsp Chili Powder (omit or reduce the amount for the kiddies)
  • 1/2 tbsp Garlic Powder
  • 1/2 tbsp Onion Powder
  • Flour or Corn Tortillas, warmed
  • Chopped Red Cabbage for Serving
  • Fresh Chopped Cilantro for Serving
  • Cojita Cheese for Serving

Instructions

For the Avocado Green Chili Sauce

  • Add all ingredients into a food processor or blender. Blend until all ingredients are a puree consistency.
    Refrigerate until ready to serve.

For the Shrimp

  • In a bowl, mix together shrimp, olive oil, lime, salt, black pepper, cumin, chili powder, garlic powder and onion powder.
  • Heat pan on medium high heat. Place shrimp in pan and cook 2-3 minutes on each side until no longer opaque.
    Remove from heat and set aside.
  • Warm tortillas according to package instructions. Fill with shrimp and top with cojita cheese, cabbage, cilantro, and avocado green chili sauce.
    Serve and enjoy!
