No-Bake Vanilla Oreo Icebox Cake

If you love cookies then this is the dessert for you! Vanilla Oreo cookies are ground to a crumb texture, mixed with butter and then baked to create a base for your cake. Cream Cheese, sweetened condensed milk, whipped cream and instant vanilla pudding are whipped together and then refrigerated. That’s how it’s able to turn into a “cake.” The cookies will serve as a harmonious base as it soaks up the cream layer! When you first take a bite, the cream and Oreos will quickly melt in your mouth.

No-Bake Vanilla Oreo Icebox Cake

For the Crust:

  • 26 Vanilla Oreos
  • ½ cup unsalted butter melted

For the Cake

  • 8 oz plain cream cheese
  • 1 cup sweetened condensed milk
  • 1 box vanilla instant pudding
  • 1 tsp vanilla extract
  • 1 8 oz container of frozen heavy whipped cream


For the Crust:

  • Preheat oven to 350.
  • In a food processor, grind cookies to a crumb consistency. 
  • In a large bowl, mix together cookie crumbs and melted butter. If your crumb mixture is clumping together, add more cookie crumbs by grinding more cookies. 
  • Once your crumbs are moist but still crumbly, firmly pack your mixture into the bottom of a springform pan.
  • Bake crust for 10 min. Remove from oven and allow to cool completely before filling. 

For the Cake:

  • Place cream cheese in a large mixing bowl and mix with a hand mixer on high speed for 2 minutes.
  • Add in condensed milk and mix on high for an additional minute.
  • Add in vanilla extract and instant pudding mix, and mix until pudding mix is well combined.
  • Gently fold in heavy whipping cream. 
  • Pour mixture on top of crust and smooth evenly.
  • Allow to cool in the refrigerator for at least 4 hours.
  • Top with whipped cream, fresh fruit and/or cookie crumbs and Enjoy!
