Mother’s Day is just around the corner and I know you want to treat your momma like the queen she is! I’ve already shared a very easy but beautiful Brunch Charcuterie Board that is perfect for Mother’s Day. Today, I’m sharing a quick and easy Refreshing Watermelon Cocktail that would be perfect alongside your brunch!

If I had it my way for Mother’s Day, I’d get served breakfast in bed (in my new One Room Challenge room of course!) with one these cocktails, remote in hand and living my very best life. Hint! Hint Jerome! No kids… no dishes… no laundry… I think this is what paradise must be like.

If you follow me on Instagram, you know I’ve taken a few steps to living a plant based lifestyle. By the way, I created this long before making that decision. However, I plan to create a non-alcoholic version of this recipe by maybe incorporating Le Croix for the sparkling effect. Once I do, you know I’ll be sharing it with you!

Refreshing Watermelon Cocktail

This cocktail is really so very simple but tastes like you went through a ton of trouble. If you decide to serve it at your next summer get together, your guests will be so impressed and think you’ve worked so hard on this but it will be our little secret that it only took a few minutes to put together. If you happen to get a really sweet watermelon, you can adjust the sweetness level by reducing the simple syrup or eliminating it all together.

Refreshing Watermelon Cocktail

Serve up this light and refreshing watermelon cocktail alongside brunch or enjoy it cooling off outdoors this summer!

  • 2 cups Fresh Watermelon Chunks
  • 2 oz Fresh Watermelon Juice
  • 1 oz Sparkling Rose’
  • 1 oz Tequila
  • 1/z oz Simple Syrup
  • Ice
  • Fresh Mint for Garnish


  • In a food processor or blend, puree watermelon chunks.
  • Using a strainer, strain puree over a cup to separate pulp from juice. 
  • In a shaker, mix together watermelon juice, sparkling rose’, tequila, simple syrup and ice. Shake until cooled. 
  • Serve and enjoy!


After straining, watermelon puree can be saved and frozen and eaten as is!
